Siddu – Soft, Steamy & Himalayan Goodness!

Recipe - 

Ingredients (For the dough)  -

2 cups whole stone ground wheat flour

1 tbsp of dry yeast or natural starter

1 tbsp sugar or jaggery for yeast activation

½ tbsp salt

Warm water as required for kneading

Ingredients for filling

2 tbsp of crushed walnuts and almonds

1 tbsp poppy seeds (khus khus)

1 tbsp sesame seeds

1 small finely chopped onion

1-2 finely chopped green chillies

Finely chopped fresh coriander

Salt to taste

 

Ingredients for serving -

Shiva Organic’s A2 bilona ghee

Mint or coriander chutney

 

Method - 

Step 1 - Prepare the dough - Take a bowl, add warm water, natural yeast, and sugar/jaggery. Let it sit for 5-10 minutes until frothy. Then add whole wheat flour, some salt, and properly knead into a soft and slightly sticky. Cover the dough with muslin cloth for 6-8 hours or overnight for fermentation. 

Step 2 - Prepare the filing - Take a separate bowl, add crushed nuts, poppy seeds (khas-khas), sesame seeds, finally chopped onion, green chillies, coriander, salt to taste. This will add both taste and nutrition. 

Step 3 - Shape the siddu - Make small little round shaped balls out of the dough while stuffing the filing. You can slightly flatten the balls as per your preference. 

Step 4 - Steam the stuffed balls - Place the steamer over the medium flame, grease the plates with organic A2 ghee, and place the stuffed siddu. Then start steaming for about 15-20 minutes until they become soft and spongy. 

Step 5 - Serve the hot siddu - Take a plate, put some hot and fresh siddu pieces onto it. Drizzle some A2 ghee over the siddu and pair it with green chutney or a simple dal.
