Kodo Millet Power Bowl with Spicy Chilli Twist

A very happy Navratri !

Here we are continuing our Nourish with Navratri series with delicious wholesome, and protein-rich fasting recipes that perfectly blend health with fasting indulgence. With Shiva Organic’s ‘Nourish with Navratri’ and on the request we got a healthy protein rich recipe for fasting which is ‘Kodo Millet Bird Eye Chili Chipotle’. This episode brings you an exciting combination of kodo milet bird eye chili with nutrition and vibrant flavour. This dish is prepared in three layers which is fluffy millet, crispy marinated paneer and spicy chipotle sauce. For this recipe we have to make the  chipotle sauce, grill the paneer and prepare the millet.

 

Let’s start making the recipe now -

 

Ingredients:

Soaked Kodo Millet from Shiva Organic

Soaked Bird’s Eye Chilli

Soaked Cashews

Paneer (cubed)

Fresh Coriander

Peanuts

Salt

Black Pepper

Fresh Basil

Shiva Organic’s Turmeric-infused Honey

 

Method - 

Step 1 - We’ll start by boiling the Kodo millet soaked overnight until fluffy.

Step 2 - 3-4 overnight soaked bird eye chili along with some cashews 

Step 3 - For chipotle sauce - We’ll take some bird eye chili soaked overnight along with some cashews, salt, and a scrunch of pepper. Now, it’s time for our star ingredient, the ‘Turmeric Infused Honey’. It gives a sweet and tangy taste and balances the hotness of chilli. Blend them together well. 

Step 4 - For marination we’ll take coriander, peanut, salt, pepper and grind them well. Now make some diagonal cuts to the paneer so that marination soaks well. Cover the entire slice with the marinade. Then we’ll put it in the airfryer and cook it until crispy. 

Final Thought, Now as the recipe is completed, it’s time for plating. So take a bowl, layer the fluffy Kodo millet, then place the crispy grilled paneer on the top and drizzle generously with the spicy chipotle sauce. Lastly, garnish with some basil leaves for the aroma. Enjoy the vibrant flavors of this wholesome and festive dish!
