What is SHU?
SHU which is Scoville Heat Units is a measurement of the spiciness of a chilli or pepper. Peppers contain a compound called capsaicinoids which determines the spice level in a chilli which is higher SHU, spicier the chili or pepper. This measuring tool Scoville Heat Units was introduced in 1912 by American chemist Wilbour Scoville, that's how the name suggests the measurement. The pepper's spice level is analysed by diluting a pepper extract in sugar syrup until a panel of taste testers can no longer detect the spiciness. The number of SHUs a pepper is assigned is based on how much sugar water is needed to neutralise the heat. India is the world's largest chilli exporter and consumer because they love the spice touch in their cuisine.
